INGREDIENTS
1 c Toosie’s GF All Purpose Flour
1 t baking powder
¼ t salt
1 t garlic
1 t basil
1 t oregano
¼ t black pepper
1 egg
1 ½ c cold water
½ c olive oil, and more if need to cook vegetables
DIRECTIONS
Prepare a variety of vegetables, sliced eggplant, zucchini, yellow squash, mushrooms etc.
Place a wide skillet on top of burner, place about ¼ c of olive oil in pan and heat over med-hi heat.
Place Toosie’s GF All Purpose Flour, spices and baking powder in a bowl and whisk together to blend. Add egg and water and blend with balloon whisk until smooth. This should look like a crepe batter. As you start to work, if batter thickens up simply add a bit more cold water to thin out.
Working with your hands or tongs, dip vegetables one by one in batter, let excess drip off, then place in hot oil. Cook for several minutes on one side then turn over and cook for several more on the other side. Time will be subject to you, you may like the veggies a bit more soft or al-dente. When cooked to desired doneness, place on a paper towel lined plate, continue to cook all your veggies, adding and heating up more oil as needed.
Enjoy as a snack with your favorite dip or a side dish to your meal! Be creative this would also be a great coating for shrimp!
Note: All oven temperatures vary, please know your oven and adjust times accordingly if needed. I recommend an oven thermometer to check the accuracy of your oven.
