1 box Toosie’s GF Bread Mix (prepared as directed on package)
½ c butter, (1 stick)
1 onion, yellow, medium size, diced
1 pound celery, diced
2 T garlic, fresh
1 t salt
½ t black pepper
2 ½ T sage (adjust to taste)
1 t oregano
2 t parsley
3 c chicken stock, hot
DIRECTIONS: Preheat oven to 350°, lightly grease 1 ½ quart casserole dish.
Prepare the bread or use a stale loaf of Toosie’s bread. Cut the loaf into ¾” cubes and place on a cookie sheet. Dry out in oven at 300° for about 3 hours. This can be done several days ahead of time and placed in a covered container.
In a large pan melt butter, add diced onion and celery and sauté 20-30 minutes or until soft but not browned. Add in fresh garlic and dry spices. Add in dried bread cubes and stir until it is mixed up nicely. Add 2 cups of the hot chicken stock and stir. Place lid on pan and let rest for about 10 minutes to let liquid absorb in bread cubes. Uncover and add last cup of chicken stock, stir and taste at this time to make any spice adjustments you want. Our family really liked the taste of sage but you can decrease original amount or increase to your desired taste.
In a separate bowl lightly stir eggs and then pour into stuffing mixture, lightly stir so you don’t break up too much of the bread cubes.
Pour the stuffing into your prepared casserole dish and place in oven covered.
Place in the middle rack of oven, bake about 1 hour or until center is hot.
Note: All oven temperatures vary, please know your oven and adjust times accordingly if needed. I recommend an oven thermometer to check the accuracy of your oven.
