INGREDIENTS
12 T Butter (1 ½ sticks) softened
¾ c Sugar
2 eggs
2 c Gluten Free Oatmeal
2 c Toosie’s All Purpose Gluten Free Flour
2 T milk½ t baking soda
¾ t baking powder
¼ t salt
¾ t cinnamon
½ c raisins (soaked)
¾ c chopped nuts (optional)
DIRECTIONS
Prepare 2- non-stick cookie sheet pans, lightly grease or line with parchment paper. Preheat oven to 400.
In bowl of mixer blend butter, sugar and eggs until light and fluffy. In separate bowl blend together your dry ingredients. Add dry ingredients to egg mixture and beat on med until well blended. Add raisins and nuts and incorporate.
Drop by large tablespoons onto prepared cookie sheet pans, flatten the tops slightly and bake 10-15 minutes, or until bottom is lightly browned.
Note: All oven temperatures vary, please know your oven and adjust times accordingly if needed. I recommend an oven thermometer to check the accuracy of your oven.
