2 ¾ c Toosie’s Gluten Free All Purpose Flour
½ c cocoa powder
¾ c brown sugar, packed
¾ c white sugar
1 c butter, softened (2 sticks)
1 T ginger
1 ½ t cinnamon
½ t cloves
¼ t nutmeg
½ t salt
2 T hot water
1 T molasses, (unsulphered)
1 t baking soda
Preheat oven to 350°, line with parchment paper or lightly grease several cookie sheet pans.
In a separate bowl, combine flour, cocoa powder, spices and salt. Stir and set aside.
In the bowl of a standing mixer, using the paddle attachment, beat the butter and sugars at med-high speed until light and creamy, about 2 minutes. Add the egg, mix until blended.
In a small bowl, stir together the hot water, molasses and baking soda, mix until the baking soda is dissolved. Add this mixture to the butter mixture and blend. At low speed add in the flour mixture and blend until incorporated, beat at med speed for 45 seconds.
Take dough out of mixing bowl and put on plastic wrap, flatten into a disk and refrigerate for 1-2 hours.
After dough is chilled, divide into 4 pieces. Work with one piece at a time. Refrigerate the others if dough is getting too soft. On a lightly floured work surface, roll out dough to a thickness of 1/8”, lightly flouring the dough and work surface as needed. Using a gingerbread man shaped cookie cutter, cut out as many as possible from the dough. Using a pastry scraper/cutter carefully pick up the dough and transfer to your cookie sheet. Gather the dough scraps and form into a ball, reroll and start the process over. If you have a lot of flour on the cookies, use a pastry brush to lightly brush off so that the cookies don’t cook with too much flour on them and turn white.
Repeat with your remaining dough.
Bake the cookies 8-12 minutes. Cool the cookies on the baking sheet for about 5 minutes then transfer cookies to a wire rack.
Prepare some royal icing and color as desired, have fun and decorate as both gingerbread men and gingerbread women!
Note: All oven temperatures vary, please know your oven and adjust times accordingly if needed. I recommend an oven thermometer to check the accuracy of your oven.
