½ c Butter, softened (1stick)
1/3 c pure cane sugar
1/3 c brown sugar
1 ½ c Toosie’s GF All Purpose Flour
½ t baking soda
½ t baking powder
½ t salt
1 t vanilla
¾ c chocolate chips
1 c chopped nuts (optional)
Prepare two cookie sheets, spray or line with parchment paper. Preheat oven to 350⁰.
Combine all dry ingredients in a bowl and set aside. In bowl of mixer combine sugars and butter. Cream until well incorporated. Add eggs and vanilla. Stir until combined, scrap down sides. Add dry ingredients on top of wet and set mixer to low, blend together, scrape down sides then turn mixer to medium and blend for one minute. Add chocolate chips and nuts (if using) at this time, blend another 20 seconds.
Drop by Tablespoons onto prepared cookie sheet and place in preheated oven. Cook for approximately 12-15 minutes until you see bottoms just start to brown. Cool on cookie sheet instead of wire rack to keep the center chewy.
Note: All oven temperatures vary, please know your oven and adjust times accordingly if needed. I recommend an oven thermometer to check the accuracy of your oven.
