6 T Butter, softened
1/3 c pure cane sugar
2 c Toosie’s GF All Purpose Flour
1 t baking soda
1 t baking powder
½ t salt
½ t vanilla
1 ½ c bananas, mashed
¾ c chocolate chips
Prepare a standard size loaf pan, grease and line with parchment paper. Preheat oven to 350⁰.
Combine all dry ingredients in a bowl and set aside. In bowl of mixer combine sugar and butter. Cream until well incorporated. Add eggs, vanilla and bananas. Stir until combined. Add dry ingredients on top of wet and set mixer to low, blend together, scrape down sides then turn mixer to medium and blend for one minute. If desired add chocolate chips at this time, blend another 20 seconds.
Scrap batter into prepared bread pan and place in preheated oven. Cook for approximately 45 minutes until golden brown and cake tester comes out clean from center.
Cool on wire rack for 20 minutes, then invert and continue to cool.
Note: All oven temperatures vary, please know your oven and adjust times accordingly if needed. I recommend an oven thermometer to check the accuracy of your oven.
